Why?

I cannot seem to be able to get ricotta right. Why? This is supposed to be about the easiest cheese out there and it continues to be my nemesis.

    Think about what you are learning though. First time too hot? Second time too much acid? You will figure it out ober time. It's an adventure and a journey.
